Holiday Home - IPA
Holiday House is a brand-new IPA we brewed in collaboration with our home away from home, The Union Hotel in Newtown, Sydney. We let the folks at the Union pick the hops on this one, and boy did they nail it, landing on a perfect combo of Citra, Peacharine and Mosaic Cryo. It pours a hazy yellow with a hint of orange and a thick, spongy white foam. On the nose, Peacharine is doing exactly what it says on the tin, with ripe peach leading the way alongside sweet tropical citrus from the Citra. Take a sip, and you'll get fresh mango, juicy peach and bright citrus, with Mosaic Cryo adding a little tropical depth underneath. The body is thick and coats the palate, and the bitterness stays super mellow, so this one goes down way too easily. Consider it your keys to your dream holiday home.

Our house IPAs are a modern twist on the New England style. They're juicy, hazy and glowing bright orange in the glass. We like to keep the bitterness low from start to finish, making it smooth, expressive and seriously drinkable.
The malt bill is intentionally simple, with oats and wheat building a soft, full body that lets the hops shine. We lean into dry hops that often deliver waves of melon, tropical fruit and ripe citrus, all wrapped up in that signature hazy mouthfeel.
These beers are bold in flavour but approachable by design- perfect for longtime hop lovers and first-time IPA drinkers alike.
